Yesterday was Bronson's birthday.  

I still remember when we first brought him home.  So in honor, I thought I'd share a few home photos :)

Cheesy Indulgence #2 - Cheesy Pesto Quiche with an Oatmeal Crust

When I first started recipe shopping for this week I immediately thought of pasta dishes, and Mexican dishes and Asian, because that's what I typically crave.  I happened to mention my plans to my friend Catherine, however, and she immediately shouted Quiche.  To be honest, I've never really given any thoughts to quiches, I never really order them out and I've never had a quiche craving.  That said, its a perfect  non-j-friendly dish and you can make them out of anything.  So I thought I'd give it a try. 

Cheesy Pesto Quiche with an Oatmeal Crust.

As per my usual, I turned to Foodgawker to get a couple of ideas and right off the bat I found this beauty of a recipe Needless to say I was hooked.  Its a quiche, its cheesy, its pesto-y and it has an oatmeal crust.  Yum. and 100% not j-friendly.  A quick trip to the store and a few substitutions later I was ready to go. 

Pesto Quiche

Ingredients:
for the crust-
-3/4 cup old-fashioned oats
-1/2 cup whole wheat flour
-3 tbsp butter
-3 tbsp milk
-pinch of salt

for the filling-
-3 eggs
-3 egg whites
-2 tbsp milk
-2 tbsp pesto
-freshly ground pepper
-1/2 large onion, diced
-1 small red pepper, diced
-1/3 cup baby bella mushrooms, sliced
-1/3 cup arugula leaves, rinsed
-2/3 cup mozzarella cheese, shredded


I started with the crust:
Preheat your oven to 400 degrees.

In a food processor, combine oats, salt and flour.

Pulse until mixed. 

Add butter, cut into cubes and pulse until crumbly.

Add milk and pulse until it starts to form a ball.

Place your crust dough between 2 pieces of wax or parchment paper, I had to smush mine together into a rough ball first. 

Using a rolling pin, roll out the dough into a circle roughly the size of your pie pan. 

It doesn't have to be exact (or pretty).

Oil your pie pan and carefully upend your crust into the pan. 

Fiddle with the edges now, to make it pretty :)  Bake the crust for 8-10 minutes. 

 Then remove and lower the oven to 350 degrees.

Meanwhile...

For the filling:

You need 3 eggs and 3 egg whites.

Add the milk and the pesto and beat well.

Slice your red pepper.

And onion. 

And mushrooms. (I cheated and used pre-sliced)

Heat a little olive oil in a skillet and add veggies.  Saute until soft. 

About 8-10 minutes. 

Add pepper to your eggs.

Now, to combine it all together:

Line the bottom with the cheese.

Add the arugula.

Then the veggies.

And lastly, the egg mixture.  Toss it in the oven for 35 minutes (remember at 350-not 400).

When its set, its done!

Catherine was right and this was an excellent idea.  Plus, now I have lunch for the rest of the week!

Cheesy Indulgence #1 - Gnocchi with Gorgonzola and Walnuts

With the hubby out in Utah on Spring Break I'm rolling out the fancy foods and indulging in all things that he can't have.  

Gnocchi with Gorgonzola and Walnuts, Broccoli and Peasant Bread

This past winter I attempted gnocchi several times, but they never turned out quite like what you get from the store.  I plan to try again this summer but for this recipe I went with Trader Joes, they always have tasty gnocchi.  I wish that the boy liked pasta more, because not only is it delicious but its FAST.  This definitely fits into the 15 minutes and under category. And its GOOD.

Gnocchi with Gorgonzola and Walnuts

Ingredients:

500g Gnocchi (the usual package size)
150 ml cream (about 6 ounces)
50g Gorgonzola (about 1/2 cups)
50g Parmesan, grated (about 1/2 cup)
2-3 tbsn walnuts, finely chopped (I used walnut halves, for a bit of crunch)
salt and pepper
2 tsp lemon juice (I used half a lemon, deseeded)
fresh parsley (I forgot this at the store so I used dried) 



First, fill a large pot with water and bring to a boil, this is to cook the gnocchi in.

Meanwhile, combine the cream and both cheeses in a pan over low heat.  

Heat until the cheese has fully melted, be sure to stir often to avoid burning or sticking. 

Once the cheese has melted, remove from heat and stir in the lemon, salt and pepper to taste and the walnuts.

Now, back to your water, once its boiling add a dash of salt and the gnocchi.

When the gnocchi start to float, they're done!  Usually about 2 minutes. 

Drain the gnocchi. 

And add the cheese sauce.

Mix it all up and add the parsley and a few more walnuts. 

Its as simple as that!


I wish that I had thought ahead and had some asparagus on hand to pair with this dish, but the broccoli was tasty as well and with a nice glass of white wine I was a happy camper.  To finish the evening off right, I watched that terrible 2000 remake of Charlies Angels and The Easy A.  I loved both :)

Food for thought

This has been a week of disastrously wonderful eating.  Fat Tuesday is perhaps the one holiday, if you can call it a holiday, that my office actually celebrates with any sort of success.  Tuesday also happened to be the day that our usual Partner's meeting caterer decided to treat us secretaries to a free lunch (wohoo!) so needless to say that I pigged out all day Tuesday on salads and eggplant parm and some sort of curried chicken as well as waay to many pieces of king cake.  And that was after my chicken pilaf dinner that I blogged about here.  And the wonderful blooming herb bread....and what I didn't mention before was that I also decided to bake cookies on Monday night...because I was craving sugar, even though I knew that cakes were coming on Tuesday.

See what I mean?  I'd love to get into pastries some day but its much harder than say tagines, because J is almost always allergic to fancy flaky deliciousness and the like.  

My cookies turned out great, even though my butter did not turn a nice "deep golden brown" which is apparently the secret to great butter cookies.  And, the butter cookies combined with the king cake and I'm sure all the coffee etc that has helped me get through the week really hasn't made my stomach all that happy.  But I can't help but keep eating them!  Its definately been a theme this week.  
Last night the boy had a law review drinks thing and I was on my own for dinner, which is such a rarity I had to make something tasty and not J-friendly. Which means creamy and cheesy and definately NOT what my already over sugared stomach was craving.  But I did it anyways out of principle, I even had white wine.  Why do we do these things to ourselves?  Why couldn't I just admit defeat and make a nice tasty salad for dinner?  Or, heaven forbid, go for a run to clear my arteries and then indulge in my three cheese tortellini with green peppers and spinach lathered in Trader Joes' Gorgonzola Walnut Pear Champagne dressing? (which is the best tortellini dip ever made fyi)

Food is such a comfort, even when it makes us feel less than ideal.  and I guess I needed comfort food last night.  Its just been one of those weeks.  I need Spring, and sunshine and warmth.  This is why teachers created spring breaks.  Where is my spring break? 

Today is J's first day of Spring Break, so yeah, im jealous.  But he just texted and offered to come pick me up from work and we made plans to stop at the store and get stuff to make something tasty for dinner together (i love home cooking dates) but I'm still all sugered out and not hungry or craving anything!  and its completely all my fault for over-indulging all week long but I will persevere, because that's what we do when it comes to food.  

No wonder we all have weight and shape and health issues.  But hooray for tasty food.
